Ingredients
  

  • 2 lbs boneless skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ½ lemon cut into wedges
  • Fresh thyme sprigs for garnish

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Pat chicken dry with paper towels.
  • In a large bowl, mix olive oil and seasonings,
  • then coat chicken evenly. Arrange thighs in a baking dish, skin side up.
  • Bake for 35 minutes or until golden brown and internal temperature reaches 165°F (74°C).
  • Rest for 5 minutes before serving.
  • Garnish with fresh thyme and lemon wedges.

Notes

For extra crispiness, broil for 2–3 minutes at the end. Store leftovers in an airtight container for up to 3 days. Great served with roasted vegetables, mashed potatoes, or a fresh salad.
