- 2 cups gluten-free flour blend with xanthan gum
- 1/2 cup brown sugar packed
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 6 tablespoons cold unsalted butter cubed
- 1/4 cup honey
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 2 tablespoons sugar
- 1/2 teaspoon cinnamon for topping
Preheat oven to 350°F.
Line baking sheets with parchment.
Mix flour, brown sugar, baking powder, salt, and spices in large bowl.
Cut cold butter into flour mixture until it resembles coarse crumbs.
Combine honey, milk, and vanilla. Add to flour mixture and stir until dough forms.
Roll dough between parchment to 1/8-inch thickness.
Cut into rectangles. Poke holes with fork.
Sprinkle with cinnamon sugar mixture.
Bake 12-15 minutes until golden brown.
Cool completely before serving.
