  • 1 cup mashed sweet potato about 1 medium potato, cooked and mashed
  • 1/2 cup creamy almond butter or peanut butter
  • 1/4 cup pure maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/3 cup dark chocolate chips plus extra for topping

Instructions
 

  • Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
  • In a large bowl, mix mashed sweet potato, almond butter, maple syrup, and vanilla until smooth.
  • Add cocoa powder, baking soda, and salt; stir until combined.
  • Fold in chocolate chips.
  • Spread batter evenly into the prepared pan and top with extra chips.
  • Bake for 25–30 minutes until set in the center.
  • Let cool completely before slicing into squares.
