Ingredients
  

  • 2 cups Medjool dates pitted
  • 2 tablespoons coconut oil melted
  • 1/2 cup natural peanut butter
  • 2 tablespoons coconut oil melted
  • Pinch of sea salt
  • 1 cup dark chocolate chips 70%
  • 1 tablespoon coconut oil

Instructions
 

  • Line an 8x8 pan with parchment.
  • Blend dates and coconut oil into a sticky paste, then press into the pan.
  • Mix peanut butter, coconut oil, and salt; spread over the date layer.
  • Melt chocolate with coconut oil and pour over top.
  • Freeze 30 minutes until firm, then slice into bars.
  • Store in freezer and let soften before eating.

Notes

Soak dry dates in warm water for 10 minutes before blending. Swap peanut butter with almond, cashew, or sunflower seed butter for a nut-free version. Store bars in an airtight container in the freezer for up to 3 months.
