Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 cup Medjool dates pitted
  • 1/2 cup natural almond butter
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon chia seeds

Instructions
 

  • Line baking sheet with parchment. Pulse oats in food processor 8-10 times until roughly chopped.
  • Add dates to processor, blend 60 seconds until paste forms. Scrape sides halfway through.
  • Add almond butter, cocoa powder, chia seeds. Pulse until mixture holds together when squeezed.
  • Roll tablespoon-sized portions into balls using slightly damp hands. Place on prepared sheet.
  • Refrigerate 30 minutes to firm up. Store in airtight container up to 1 week or freeze 3 months.
