Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 head iceberg lettuce
  • 2 cups shredded cheddar cheese
  • 1 cup diced Roma tomatoes
  • 1/2 cup diced red onion
  • 1 can black beans
  • 1 bag nacho cheese Doritos
  • 1 cup Catalina dressing

Instructions
 

  • Brown the ground beef in a skillet over medium-high heat. Drain any excess fat, stir in the taco seasoning and a splash of water, and simmer for 3 minutes until thickened. Let the meat cool slightly.
  • Chop the lettuce and dice the vegetables. In a large serving bowl, combine the lettuce, tomatoes, onions, beans, and cheese.
  • Just before serving, toss the beef and slightly crushed Doritos into the bowl. Drizzle with Catalina dressing, mix gently to coat every crunchy bite, and enjoy immediately!

Notes

To keep the salad from getting soggy, only add the chips and dressing right before serving. If you're planning on leftovers, store the meat and salad base in separate containers. I find that using "Cool Ranch" Doritos is a wonderful way to change up the flavor profile for the kids!
